Raw Banana Pancakes

Serves 1

Ingredients

1 banana
2 tablespoons coconut meal or dried coconut
cinnamon

Directions

Mash the banana with a fork in a bowl until very smooth. Add the coconut meal and some cinnamon to taste. Mix well.

Flatten the banana/coconut dough and make small pancakes of them

Leaf out in direct sunlight for about 1 hour, flip over and leaf for another hour. You may also use the dehydrator or oven. But then it will take longer to dry them.

They don't have to be dry, just on the outsides. They're so good anyway that they're usually gone before I want to serve them.

Tip

If you make them the night before, you can take them to go for breakfast in the morning.

Raw Carrot Juice

Serves 1

Ingredients

2 pounds carrots
1/2 lemon

Directions

Wash the lemon and cut most of the peel off. Juice the lemon and the carrots. Ready!

Tip

Personally, I like to scrape the carrots, because I don't like the earthy taste when I don't.

If I take this juice for breakfast, I feel so good the rest of the day. It gives me instant energy.

I also like to juice about a 1/2 bunch green leafy vegetables with the carrots for extra alkalizing minerals. Carrot greens, kale or lettuce are a good choice. Apples, celery and fennel also go well with carrot juice. If you're a beginner, start to add only one or two leafs of greens to make sure you still like it. Greens are an acquired taste and it may take some time for you to get use to.

Hemp & Berry Smoothie

Ingredients

1 banana
2 tablespoons hulled hemp seed
1 bag of frozen berries
1 cup pure water

Directions

Put all ingredients in a high speed blender. Add enough water so that all ingredients are covered. Blend well.

You may want to add a little more water if it's too thick. You may blend longer if you find it too cold.

Tip

This is such a yummy and easy breakfast recipe. This is the other breakfast my daughter loves, but we drink this for lunch too.

The hemp seeds provide good fats and super protein. Hemp seeds are the only seeds that have no enzyme inhibitor and therefore don't have to be soaked in water before eating.

If the berries are sour, you may add a few drops of (liquid) stevia to sweeten.

Raw Fudge

Yummy!

1 cup medjool dates and a vanilla bean cut into pieces
(soaked in just enough water to cover overnite to soften)
3/4 cup raw cashew butter
1 cup raw cacao powder
(peel and dehydrate cacao beans then grind up to a powder)
3/4 c. raw carob
1/2 c. raw mesquite
1 T. coconut oil
splash of agave nectar
pinch of salt

Blend all the ingredients in a powerful blender (I use a K-Tec) until it is a smooth batter. Line a glass baking dish with wax or parchment paper and pour on the batter. Freeze for a few hours, take out of freezer to cut into squares and put back into freezer. The next day its ready and kinda solid. It starts to get really gooey as it thaws so I just pull a piece out of the freezer when I want to eat one. Really yummy!

Spaghetti

Use a Spiral Slicer (Saladacco) on a zucchini to create scrumptious angel hair pasta. That's it, add nothing to it.

This is as close to the real thing as it gets!

Tomato Sauce

15 cherry tomatoes
4 baby carrots (or two full-size carrots)
2 T. olive oil
2 T. Tamari Soy Sauce
oregano, salt & pepper & spices to taste

peeled eggplant
sliced to about 1/2" slices but really a little thinner, as you don't want to take forever, or make too thin where it falls apart....give it your eye guess I suppose

On teflex sheet put your sliced eggplant..
on eggplant...drizzle olive oil

You can put the It. seasonings here now...

Then in any order: red/yellow peppers, diced or sliced, then olives, diced or sliced, fresh basil...(think fresh is a key so the other stuff you can fake, but not the "fresh" basil). Cut the basil up and sprinkled nicely on the top...then placed fresh slices off tomato on top with some more seasonings under it. Red pepper hot chili seeds or pinch cayenne for zing. Tomatoes for the moisture on top. Top after it comes out of dehydrator with a raw cheese (grated walnut)or even pine nuts ground and sprinkled on top. Why not? Use imagination as your creation evolves!

Place in dehydrator several hours (maybe 4) and when it gets soft I call it ready.

Whatever veggies you love put them on.

Raw Lasagne

Raw Lasagne

Basil, to taste
1 c. Brazil nuts
1/2 soft, pitted dates
1 c. pine nuts or macadamia nuts
2 T. cold-pressed olive oil
3 T. cold-pressed olive oil
oregano, to taste
salt, to taste
salt, to taste
A bunch of fresh spinach leaves
1/2 to 1 jar of sun dried tomatoes
2-3 fresh tomatoes

Noodles: Clean spinach leaves

Marinara Sauce: Add jar of sun dried tomatoes blended with fresh tomatoes, Italian herbs such as basil, oregano, salt, olive oil, soft pitted date, ...blend.

Cheese: Put pine nuts or macadamia nuts, brazil nuts in a food process or blender with salt and garlic.

Layer in a glass lasagna pan: spinach leaves first, then the red marinara sauce, last the white nut cheese. Do another layer. Drizzle cold-pressed olive oil over the dish.

(Optional: use thin zucchini slices for the noodles, squeezing some lemon and drizzling olive oil to soften the zucchini.

"No Bake" Oatmeal Cookies

"No Bake" Oatmeal Cookies
1/3 c honey
1/4 c soy milk
1 T carob powder
1 c quick oats
1/4 t vanilla
1/4 c walnuts
handful of dried dates

Combine honey, soy milk and carob in pan. Heat till boiling and boil for 1 minute, stirring. Remove from heat. Blend all ingredients together. Drop by spoonfuls onto wax paper or baking sheet sprayed with Pam. Will set up as they cool. Refrigerate. Makes 12-14

Nut Loaf

This is so tasty, meatloaf will pale in comparison! Filling too.

Two cups nuts (Any combination of one or more or all of these: Brazil Nuts, Almonds, Cashews, Pecans, Pine Nuts, Sunflower Seeds, Pumpkin Seeds, Walnuts, Hazelnuts)
Red pepper
Tomato
Garlic
Onions
Mushrooms
Whole Pine Nuts

1.Grind nuts in meat grinder.
2.Chop vegetables finely and steam for two minutes on low. (This is breaking the rule of raw a little but steaming on low for a minute or two you won't lose many nutrients).
3.Mix vegetables and ground nuts.
4.Put in baking pan and bake on low oven for two minutes to warm
5.Spread Tahini Sauce on top (Raw tahini, lemon juice, honey, and garlic)

Great cold on Manna Bread or Essene Bread, which are brands of unleavened (no yeast) bread. They are basically just cooked a minute or two on low so they are still full of life, as you can tell by how rich and filling they are compared to normal bread. There are all kinds of Manna bread, made from different combinations of nuts, seeds, sprouted grains, and fruit. A real delicacy with none of the dangers inherent in bread such as wheat, flour, eggs, butter and sugar, which all clog the body.

Nut Milk

1 cup Nuts
2 cups Water
1 Banana
1 tablespoon Honey

Liquify in blender

Guacamole

Guacamole
1 ripe avocado
2 diced tomatoes
1 lemon
1 diced red pepper
onion and garlic to taste

Blend avocado to creamy lumpy consistency with fork. Add other ingredients

Hummus

1/2 c ground sesame seeds
1c mashed garbonzo beans
2-3 cloves garlic-crushed
3/4c olive oil
2 T lemon juice
2 T chopped Parsley

Blend and serve.

No-Cook Nutty Fettucini Alfredo Sauce

9 1/2 oz silken tofu (1/2 a package)
1/3 cup tahini paste
1/3 cup lemon juice
1/3 cup nutritional yeast flakes
3 tbsp. tamari or soy sauce
basil to taste
fresh pepper to taste
1/8 tsp turmeric
Put all ingredients in a blender and blend until smooth.

Stir into a pot of cooked pasta and warm everything up over medium heat. Top with alfalfa sprouts if desired.

1/2 large tomato - chopped
1/2 lemon juiced
3/4c carrot juice
1T olive oil
1/4 t oregano
1/4 t basil
2 cloves garlic
1/3c pecans

Blend. Then add grated beet, grated zucchini and chopped parsley or red pepper

Bean Salad

1/2 cup dry garbanzos
1/2 cup dry red or kidney beans
1/2 cup dry black beans

Soak and cook in separate pans. Drain.

Cut up:
1 onion
1 green pepper
1/2 tablespoon parsley

Stir beans and vegetables together. Add dressing.

Dressing:
1/3 cup apple cider vinegar
1/3 cup salad oil
1/3 cup honey
1 teaspoon salt
1/2 teaspoon pepper

Mix and pour over salad ingredients.

Celery - Nut Salad

4 stalks celery, sliced
1 green onion, minced
minced parsley
2 large tomatoes
1/2 cup grated nuts (walnut or pecan)

Cut the tomatoes in small pieces and mix with the celery and green onion and parsley.

Add a mixture of orange and lemon juice as dressing. Use lettuce leaves as a bed for this salad and sprinkle with grated nuts.

Sprout Salad

1 cup any sprouts you have on hand (alfalfa, lentil, sunflower, or other)
1 cucumber, diced
2-3 scallions, chopped
3 T. lemon juice
2 T. tahini
1 clove garlic
Pinch cayenne

Put the salad ingredients in a serving bowl. In a small bowl mix the lemon juice, tahini, and garlic minced with the salt. Add pinch of cayenne. Whisk together well. Pour dressing over salad and toss to blend flavors

Carrot salad

Carrot salad
1 cup grated carrot
1c chopped tomatoes
large bunch of parsley - chopped
1 clove garlic, crushed
1/4 c ground nuts
mix in 2 T olive oil

Spinach Salad

spinach leaves for bed
1/4 c red onion -soaked in juice from a lemon for a half hour
1T chopped avocado
1/2 tomato chopped
1/4c cauliflower
1T sunflower seeds

top with mixed salad sprouts
tahini dressin

Fruit Muesli

3c fresh fruit - cut up
1c rolled oats1/2c nuts (optional)

Should be very juicy - if not add 1t fruit juice. Allow to soak for 20 minutes

Raw Oatmeal

Raw Oatmeal
1/4 - 1/3 cup oats - cover with distilled water and let sit overnight (use pure unprocessed oats)

In the morning add
1/2 chopped apple
1-2 TBS raisins
1/2 tsp. cinnamon
1 TBS raw honey
